The Freeze-Drying Process

     Freeze-Drying is a Floral Preservation process that is a combination of science and creative design, which was originally created for the pharmaceutical and food industry. A special Freeze-Drying machine is used to accomplish this task.
Almost all botanicals, fruits and vegetables can br Freeze-Dried. The process used is called "sublimation".

What is Sublimation?

     Once the flowers are deeply frozen, a vacuum is applied to pull the water out in the form of water vapor. Sublimation occurs when frozen liquid, by-passing the liquid state, goes directly to a gaseous state. The water vapor is then transferred to a separate chamber, called an "ice bank". It forms into ice, and is then removed.
     After all of the water is removed from the product, the Freeze-Drying chamber is slowly returned to room temperature. The whole process takes approximately 12-14 days, and cannot be rushed.
